Our Story


Bādolina Bakery & Cafe opened in June 2021 as part of Sof hospitality group. Sof Hospitality (Itai Ben Eli, Sash Kurgan, Itamar Levy) was established as the restaurateurs began to expand and form new brands – beginning with Bādolina Bakery & Cafe, a spin-off of Doris Metropolitan’s “to die for” bread service and custom cakes. The made-to-order bake lab serves one-of-a-kind creations by executive pastry chef and partner Michal Michaeli. Under Michaeli’s genius, the bakery features a variety of flavor profiles bringing rich, cultural specialties to life – modern Middle Eastern and Israeli baked goods, sweet and savory pastries, custom cakes, desserts, babkas and signature coffee.

Bādolina Bakery & Cafe is located in Rice Village at 5555 Morningside Drive. There are two designated parking spots and a large outdoor patio.

Michal Michaeli is an innovative pastry chef for the Houston-based restaurant group Sof Hospitality.  She oversees the bread, pastry, and dessert programs at Doris Metropolitan (New Orleans, Costa Rica, Houston) and Bādolina Bakery & Cafe.  Michaeli’s wildly successful bread program at Doris Metropolitan took on a life of its own and now has its own place to shine in the form of an elevated bakery.

The made-to-order bake lab showcases all of the creations of Michaeli where she features flavor profiles from around the world bringing rich, cultural specialties to life.  Customers can expect modern Middle Eastern and Israeli baked goods, sweet and savory pastries, along with specialty sourdoughs, croissants, babkas and more.

Born in Israel, Michaeli grew up with a passion for creation. She has perfected dozens of bread recipes and continues to impress customers with her decadent rolls. She has updated traditional pastries with modernist approaches and turns heads with her elegant presentations. She uses her Israeli background to create recipes that appeal equally to the eyes as they do to taste.

“Bādolina will take you on a journey that you have yet to experience. The textures and combination of flavor profiles are something we are excited to share with you all,” said Michaeli.  She and executive chef Sash Kurgan have been testing recipes for a few years, preparing for the day their vision would come to life.

The bakery showcases everything from Michaeli’s childhood recipes to techniques she picked up through traveling and working in kitchens around the world.

She loves to incorporate various spices in her recipes, a favorite being zaatar, which she grows herself at home.
