Doris Metropolitan’s Michal Michaleli will head up her own bakery in Rice Village

I needed some really good news this week, and I got some. Pastry chef Michal Michaeli, whose work I so admired when I reviewed Israeli steakhouse Doris Metropolitan, will head up her own dedicated bakery-cafe opening in Rice Village this spring.

Badolina, as the bakery will be called, can’t open soon enough for me. Michaeli’s olive-oil-laminated breads in particular wowed me at Doris, where the bread service is among Houston’s most distinctive.

I still remember my first taste of her coiled, multilayered feta-and-caramelized onion rolls as if it were yesterday. Her stretchy log of focaccia, too, and a whorl of black-olive bread that looked like a freckled snail shell.

Currently under construction at 5555 Morningside Drive, the bakery will adjoin Doris Metropolitan’s upcoming casual restaurant project at that address, the 100-seat Hamsa. There will be two dedicated parking spots in front of Badolina for curbside pick-up. I plan to use them.

It’s smart of Doris partners Itai Ben Eli, Sash Kurgan and Itamar Leavy to expand their reach at a lower price point. Doris Metropolitan’s Israeli-inflected steakhouse fare is both memorable and pricy. Badolina and Hamsa will bring their talents within reach of many more Houstonians, including the nearby Rice University community, which is within easy walking distance.

Michaeli and Doris’ executive chef Sash Kurgan have been testing recipes for the bakery for a couple of years now, and they’re planning to offer a spectrum of sweet and savory items, including croissants, babka, specialty sourdoughs, custom cakes and desserts.

A signature blended coffee is in the works, too. And there’ll be a patio, shared with Hamsa, on which to enjoy it all.

That Bādolina name? It refers to an Israeli storybook from which the pastry chef has taken inspiration. Something about forging your destiny by marshalling your own unique talents. Michaeli has them in abundance.
